
Chef Chris Valdes, a Food Network Star finalist from Season 14 and renowned TV host, lost 40 pounds without sacrificing his passion for cooking. The Miami native, celebrated for his Cuban-inspired dishes, shared his transformative journey with M&F, revealing how he harmonized his love for food with a healthier lifestyle. Valdes, also an author, has captivated audiences with his culinary expertise, making mouths water with his delicious creations.
A Chef’s Journey to Healthier Cooking
Valdes describes his cooking style as “bold, flavorful, and heavily influenced by my Cuban roots,” deeply rooted in his Latin and Caribbean heritage. However, he acknowledges the challenge of maintaining a calorie deficit in a profession centered around food. Latin cuisine, while rich in nutritious ingredients like beans, vegetables, and lean proteins, also features comfort foods that are often high in carbohydrates and fried.
Instead of eliminating these dishes, Valdes focused on adjusting cooking methods and portion sizes. He emphasizes the importance of smart ingredient choices while preserving the flavors that define his cultural dishes. This approach allows him to honor his heritage while aligning with his health goals.
Emotional Ties to Food
Valdes’ relationship with food is profoundly emotional. Growing up in a family restaurant, food was synonymous with love, comfort, and celebration. He recalls, “I grew up in our family restaurant, where food was around us 24/7.” However, his world shifted when his father went to prison, and the restaurant closed. Cooking became his escape and eventually his career.
Despite his success, Valdes faced health challenges. At 23, he received a wake-up call about his high cholesterol. Initial attempts at weight loss, including gym sessions and even liposuction at 25, were unsustainable. “At 25, I even underwent liposuction,” shares Valdes. He realized that physical changes alone wouldn’t alter his habits or mindset.
Valdes’ turning point came with CrossFit, which not only kept him active but also improved his mental outlook. He adopted the 21/90 rule, committing to 21 days of building a new habit and 90 days to make it stick.
By focusing on how food made him feel, Valdes made lasting changes. He cut out sugary sodas and greasy foods, opting for protein, vegetables, and fresh ingredients. He also adopted healthier cooking methods like grilling and air-frying instead of deep-frying.
Balancing Flavor and Health
Valdes emphasizes that Latin cuisine isn’t inherently unhealthy. It includes nutritious staples like beans, vegetables, lean proteins, seafood, avocado, fresh herbs, citrus, and spices. However, he acknowledges that comfort foods from his culture can be fried or high in carbohydrates. Instead of eliminating these dishes, he focuses on modifying cooking techniques and controlling portions.
Sustainable Habits and Culinary Growth
He also relies on fresh ingredients like citrus, herbs, garlic, chiles, and spices to enhance flavor without heavy sauces. These adjustments have not only helped him maintain his weight loss but also made him more intentional as a chef.
